sugar snap pea salad with mint, feta + strawberries
Strawberries, gingham, snap peas and mint – nothing says summer more than this combination. This salad is best when eaten fresh. If you’re making it for a cookout, mix the dressing ahead of time and then throw everything together at the last minute. Best part is, the snap peas are raw so no need to boil water in this heat. If it’s your first time eating strawberries in a savory dish, you’ll definitely be hooked after this.
sugar snap pea salad with mint, feta + strawberriesÂ
1 pound raw sugar snap peas, trimmed
2 cups sliced strawberries (about 12 strawberries)
1/2 cup crumbled feta cheese
1 cup freshly chopped mint
for dressing
2 tablespoons red wine vinegar
1 tablespoon lemon juice
2 teaspoons Dijon mustard
1/2 teaspoon sugar
1/4 teaspoon salt
3 tablespoons olive oil
In a large bowl, combine snap peas, strawberries, feta and mint. In a small bowl, combine vinegar, lemon, mustard, sugar and salt. Stir until combined. While stirring, slowly pour in oil; stir until emulsified. Add dressing to salad; toss gently. Season with salt if desired.
