toad in a hole + avocado
I love the idea of toad in a hole (also known as one-eyed jacks). Not only is it adorable, it’s also pretty convenient. Instead of trying to balance scrambled or fried egg on a slice of toast to get the perfect bite, you can secure a piece of bread and egg on your fork for the ultimate savory breakfast bite. When else does it feel so right to eat your bread with a knife and fork? Add a schmear of avocado to every bite or simply use it in place of the egg if you have leftover bread. Technically, the egg should stay put inside the hole, but mine leaked causing it to spread all over the bread, which I ended up loving – more flavor in every bite.
toad in a hole + avocado
serves 1
1 teaspoon salted butter
1 teaspoon olive oil
1 slice of bread
1 egg
2 slices avocado
Salt and pepper to taste
In frying pan over medium heat, melt butter with oil. With a 2 or 2-1/2 inch wide cookie cutter or drinking glass, cut the center out of the slice of bread. Cook slice in frying pan on one side for about 1 minute. Turn over, crack the egg into the center of the bread slice. Cook for about 1 minute, turn over and cook until set, about 1 more minute. Season with salt and cracked pepper. Serve with avocado.



Yum! Minus the avocado and adding syrup, my father has made this every single Christmas morning since the day I was born…. Oh, the memories!
